The subject of this final paper is propolis, a resinous mixture that are collected by bees from buds of trees, vegetable juices or other plant sources, its positive characteristics and composition. The emphasis was placed on polyphenols and flavonols, as well as the indication of the association of dry residue of propolis with the total concentration of polyphenols and flavonols in alcoholic tinctures of propolis. In this paper the extracts and tinctures of propolis and their different amounts of dry matter are examined. Various concentrations of total polyphenols and flavonols were also investigated in various extractions and tinctures of propolis, determined by UV-VIS spectrophotometry. Propolis samples were first made by propolis extraction, by propagating bulbous propolis with 70 % alcohol. After the extraction procedure lasting for at least three weeks, a filtration process followed by alcoholic tincture of propolis to which the dry substance was determined in percent by drying at a temperature of 110 °C for 3 hours. After determination of the dry matter in percentage, the determination of the total concentration of polyphenols and the total concentration of flavonols is determined. Determination of the total concentrations of polyphenols and flavonols is conducted by UV-VIS spectrophotometric method with following reagents: Folin-Ciocalteu reagent (polyphenols), and AlCl3 aluminum chloride (flavonols).
