Abstract
Masti spadaju u skupinu prirodnih tvari koje se mogu naći u svim biljnim i životinjskim stanicama, a posebno u masnom tkivu kopnenih životinja, morskih sisavaca i ribe, te kod sjemenki viših biljaka. Ulja spadaju u skupinu neutralnih, nepolarnih i lipofilnih tekućina, koje se ne mogu miješati sa vodom. Prirodne masti i ulja sadrže u sebi aditive, koji im daju svojstven okus i miris. S obzirom na raširenost u prirodi ulja i masti, od davnina su jedna od osnovnih namirnica u prehrani čovjeka. Vezano za različita podneblja i izvore masti i ulja, smatramo ih autohtonim proizvodima pojedinih regija i/ili država. U Hrvatskoj jedna od osnovnih prehrambenih namirnica Dalmacije i Istre je maslinovo ulje. U kontinentalnom dijelu Hrvatske, a osobito u Slavoniji, gdje se stanovništvo tradicionalno bavi uzgojem stoke, bez svinjske masti ne može se zamisliti slavonska kuhinja.
Abstract (english)
Fats belong into a group of natural substances that can be found in all plant and animal cells, especially fatty tissue of land animals, marine mammals and fish, and higher plant seeds. The oil belonge into a group of neutral, nonpolar and lipophilic liquids that can not be mixed with water. Natural fats and oils contain in themselves additives, which give them the characteristic taste and smell. Given the widespread of nature, oil and fat are from ancient times, one of the basic foods in human nutrition. Regarding the different densities and sources of fats and oils, we consider them indigenous products of particular regions and / or states. In Croatia one of the main foodstuffs of Dalmatia and Istria is olive oil. In the continental part of Croatia, and especially in Slavonia, where the population traditionally deals with cattle breeding, without pig fat Slavonian cuisine can not be imagined.
