Abstract
Oku nevidljivi organizmi, koji su svuda oko nas, privlače veliku pozornost. Iako mali, imaju veliku ulogu i značaj u današnjem svijetu, prvenstveno jer njihovo djelovanje ima dva moguća ishoda. Prvi je dobar. Koriste čovjeku u proizvodnji brojnih namjernica, te ţive u samom čovjeku i pomaţu u mnogim procesima u tijelu. Drugi je loš, te ovaj rad govori koji su to mikroorganizmi, gdje se nalaze i kako postupiti da se spriječi njihov rast i razmnoţavanje na mjestima na kojima bi mogli čovjeku stvoriti problem u obliku bolesti i zaraza. Takvo mjesto su pekare, objekti u kojima se proizvodi hrana, i gdje površine, predmeti i ruke dolaze u doticaj s hranom. Provedeno je mikrobiološko testiranje površina u pekarama na području Slavonskog Broda, kako bi se utvrdilo da se u pekarama ne nalaze odreĎeni patogeni mikroorganizmi ili da njihov broj ne prelazi dopušene granice.
Abstract (english)
The eye invisible organisms, whom all around us, attracts big attention. Although small, they have big function in world we knew today, primarily becauce their actions have two possible outcomes. The first one is good. They are useful in food production, they live in man's body and help in many processes in the body. The second one is bad, and this paper explains what microorganisms are, where they are and how to prevent their growth and multiplication in places where they can create a problem to people in form of diseases and infections. Such a place is bakeries, areas where food is produced, and where surfaces, objects and hands come into contact with food. Microbiological testing of surface area in bakeries in the area of Slavonski Brod was carried out in order to establish that no specific pathogenic microorganisms were found in bakeries or that their number did not exceed the permitted limits.
