Abstract
Zadak ovog završnog rada bio je napraviti fizikalno – kemijska ispitivanja vina na tri različita uzorka vina (Traminac 2015, Traminac 2016, Traminac 2017) prije njihovog punjenja u boce. U prvom dijelu rada govori se o sirovinama za dobivanje vina, tj. o grožđu, njegovom sastavu. Nadalje, opisuje se sama berba i transport grožđa, kao i prerada grožđa u vino. U radu opisuje se i proizvodnja bijelog vina od alkoholne fermentacije pa sve do punjenja vina u boce. U eksperimentalnom djelu opisuju se načini provođenja fizikalno – kemijskih analiza vina (vol.% alkohola, ukupnih kiselina, ukupnog SO2 i šećera). Nakon opisivanja analiza slijede rezultati i rasprava o dobivenim rezultatima analize.
Abstract (english)
The task of this final work was to make physico - checimal test on three different samples of wine (Tramianac 2015, Tramianac 2016, Tramianac 2017). In the first part of the work, we talk about raw materials for the wine production, about grapes and its composition. In further is described the harvest and the transport of grapes as well as grape processing into wine. The work describes also the production of white wine from alcohol fermentation until the filling of the wine into bottles. The experimental work describes the conduction of physico-chemical analysis of wine (vol% of alcohol, total acids, total SO2 and sugar). After describing the analysis, follow results and discussion about the results of the analysis we get.
