Abstract (croatian)
U slavonskim domaćinstvima postoji stoljetna tradicija proizvodnje izvornih proizvoda od svinjskog mesa. Uzgoj svinja i proizvodnja suhomesnatih proizvoda uglavnom je za vlastite potrebe, a tek neznatno za tržište. Jedan od poznatijih autohtonih trajnih suhomesnatih proizvoda Slavonije je slavonska šunka. Slavonska šunka je proizvod, koji nastaje soljenjem, dimljenjem i zrenjem obrađenih svinjskih butova. U radu su prikazane potrebe i mogućnosti zaštite imena slavonske šunke, kao autohtonog prehrambenog proizvoda na EU tržištu.
Abstract (english)
There is centuries-old tradition of production of originally pork meat products in Slavonian households. Cultivation of pigs and production of cured meat is mostly common for households' needs and rarely for the markets. Slavonian ham is one of the most common indigenous charcuteries of Slavonia. It is the product made by salting, smoking, and ripening of treated pork ham. Needs and potentials of protecting the Slavonian ham as the indigenous food product on the EU market are presented in this course.
